DR. MARTIN'S THANKSGIVING TURKEY
Twas the night before Thanksgiving, and all through the house....the aroma was stirring....Before you go to bed, say 11:00...Prepare and season your turkey (if you want to stuff the turkey that's ok, too). Place on a roasting rack in a roasting pan with a tight fitting lid that seals. Place 6 cups of chicken broth in the roaster. Place lid on the roaster, and Bake in preheated 500 degree oven. For a small turkey, cook 1 hour and turn oven off. For a larger turkey, cook 1 hour 15 minutes and turn oven off. DO NOT LIFT LID, DO NOT open oven door. Leave in the oven with the door closed until a couple hours before serving. Remove from oven, prepare your favorite side dishes. Now, lift the lid, carve and enjoy your steamed turkey.
